1. Summer Porridge

It is the easiest recipe that you can make for breakfast. You would need almond milk, pomegranate seeds, sliced kiwi fruit, maple syrup, blueberries, oats, chia seeds, and mixed seeds (optional). In a blender, blend milk, maple syrup, and blueberries.

Take a bowl and add chia seeds and oats into it. Pour the blend and allow it to rest for 5-7 mins. Stir again and garnish it with the fruits and mixed seeds. Keep the mix in the fridge for a day. Add pomegranates seeds before serving.

2. Greek Chickpeas

Greek chickpeas taste delicious and are a perfect recipe if you are preparing any vegan meal for the first time.

To make greek chickpeas, you would need cinnamon, sweet paprika, olive oil, garlic cloves, smoked paprika, cooked chickpeas, kalamata olives(optional), peeled plum tomatoes, sugar to taste, 2-3, shallots, 4-5 slices of crusty bread, and black pepper to taste. Take a pan and heat it on the medium flame. Add shallots and garlic and saute until they turn soft.

Add all the spices and other ingredients into the pan and stir the mix for 3-4 minutes. Add roughly chopped tomatoes and simmer it on a low flame. Mix chickpeas and season it with pepper, salt, and sugar. Serve the mix on the toasted bread and garnish it with black olives.

3. Pumpkin Cinnamon Rolls

You would need vegan butter, self-raising flour, pumpkin puree, dried active yeast, salt, caster sugar, and unsweetened almond milk. For the filling, take brown sugar, cinnamon, and vegan butter. To make cashew frosting, you would need 1-½ tbsp vanilla extract, icing sugar, almond milk, and soaked cashews.

On a low heat, melt the butter. Take a bowl and add sugar and yeast to it. Stir until dissolved. In the same bowl, add pumpkin puree, almond milk, vanilla, and cooled butter mixture. Make a dough and knead it for 5-7 minutes to give it a smooth texture. Cover the dough with a film and let it sit overnight.

Remove the dough from the fridge and spread the butter on it. Roll the dough in the desired shape and arrange the rolls into a baking dish. Pre-heat the oven at 350f/180c.

Prepare the glaze by blending the cashews and adding sugar and vanilla to the paste. Add almond milk to make the frosting smooth. Bake the rolls for 15-20 minutes and then pour the cashew glaze.

4. Oil-Free Crepes

To make this yummy recipe, you would need one ripe banana, brown rice flour, baking powder, oat flour, and coconut sugar (optional). Blend the ingredients in a blender. Heat a pan on a medium flame and pour 1/4th cup of batter.

Spread the batter as thin as possible. Cook one side for 2-3 minutes and then flip the cake and cook the others second. Fill the pancakes with fruits or enjoy them plain.

5. Vegan French Toast

In a blender, blend banana, maple syrup, cinnamon, coconut milk, and vanilla extract. Blend until the paste turns smooth. Take a pan and heat the vegan butter over medium heat. Dip a slice of bread in the batter and place the bread on the pan.

Cook the bread for 3-4 minutes and or until it turns brown. Flip the bread and repeat the same. Serve it hot with vegan butter and maple syrup. You can also use the toppings of your choice.
