To make this mouth-watering vegetarian curry, you would need 2tbsp vegetable oil, one chopped onion, paneer cubes, baby potatoes, 500g carton passata (uncooked tomato puree), frozen peas, lemon juice, chopped coriander, curry paste, vegetable stock, and yogurt to serve.

Cook paneer cubes until they turn brown in a pan. Now saute onions for 5 mins. Add potatoes, peas, and curry paste, and then cook it for 2-3 minutes. Now add the passata to the pan. Bring the mix to boil and stir it occasionally. Top it with yogurt and serve it with stuffed naan.

2. Chickpea Potato Curry

This delicious vegetarian curry is prepared with different spices. It includes cubed potatoes, onion, cans of drained chickpeas, minced garlic, canola oil, white pepper, chopped parsley, nutmeg spice, habanero pepper, curry powder, and salt.

Add oil to the pan and heat it for 2-3 minutes. Add onions, garlic, smoked paprika, and other ingredients to it. Now, add potatoes and saute the mix for 3-4 minutes. Add stock to prevent any burns. Next, add chickpeas. Let it simmer until it thickens. Add salt and pepper according to taste.

3. Light Paneer Curry

To prepare this yummy recipe, you would need washed and rinsed basmati rice, grounded cumin, turmeric, vegetable oil, garlic, onion, chopped ginger, roughly chopped tomatoes, a handful of spinach, lemon juice, frozen peas, and paneer.

In a pan, add rice, salt, and water. Cook it for 10 minutes. Mix the spices and roll the paneer into it. Heat the oil and deep fry paneer until it becomes crispy. Now, blend the onion, garlic, ginger, and tomatoes until they turn smooth. Add the paneer with spinach.

Squeeze lemon to enhance its taste. Serve it hot with rice.

4. Kidney Bean Curry

Kidney beans are nutritious and offer several health benefits. To make Kidney Bean curry, you would need a finely chopped onion, vegetable oil, peeled and finely chopped ginger, ground paprika, kidney beans chopped garlic, chopped coriander, salt, and spices as per taste.

Heat the oil and saute onions for 2-3 minutes. Now, add ginger and garlic until fragrant. Add the spices, chopped tomatoes, and kidney beans in the water(vegetable stock). Let it simmer for 15-20 minutes. Serve it with hot basmati rice or stuffed naan.

5. Spicy Okra Curry
