4. Greek Lentil Casserole

You would need vegetable broth, black pepper, garlic, onion, lentils, greek oregano, red and green bell pepper, tomatoes, and lentils.

  • Take bell peppers and drained tomatoes in a bowl.
  • Cook and stir them for 30 minutes in a slow cooker.
  • Combine other ingredients in a slow cooker and cook on high flame for 2 hours (approx).
  • Add a cup of feta cheese and stir gently.
  • Let it cook for 10-20 minutes.
  • You can bake at 400F in the oven after adding more cheese, but it is optional.

  • Top the recipe with sliced green onion and serve it with chopped coriander.
