Melt the chocolate, coconut oil, and syrup in the bowl in the microwave for 30 minutes until smooth. Break the nuts into pieces and add cranberries and pistachios. Preheat the oven to 375°F. Line a parchment paper in a baking pan and leave 1inch on both sides. Mix butter, sugar, and flour in a food processor. Add salt, baking soda, oats mixture in a food processor until the mix turns fluffy. Press everything into the prepared pan.

Mash the raspberries and sugar in a bowl. Spread the mix on the prebaked crust. Bake until golden brown and let it cool for 30 minutes. With the help of overhang, transfer the dough and let it cool completely.

5. Vegan Gluten-Free Chocolate CupCake

This chocolate cupcake is vegan and gluten-free. It is topped with chocolate ganache frosting and tastes delicious. For cupcakes, you would need apple cider vinegar, granulated sugar, salt, unsweetened cocoa powder, almond meal, gluten-free oat flour, puree (butternut squash and apple sauce), coconut oil, and maple syrup.

Preheat the oven to 190C and line the muffins with liners. Add baking soda to almond milk vinegar and stir. Next, add sugar, almond milk mixture, maple syrup, and beat to combine.

Add almond milk if the batter appears to be thick. Divide batter between muffins and bake them for 30 mins. Let them rest for 10 mins and let them cool. For frosting, add almond milk to the bowl and microwave it for a minute.

Add chocolate to the milk, softened butter, and cover for 2 minutes. Beat the mix and add powdered sugar until light and fluffy. Frost cupcakes and sprinkle raspberries for a perfect finish.
