1. Vegan Couscous Salad

Vegan Couscous Salad is a vegetarian plus vegan recipe that includes green onions, tomatoes, chickpeas, cucumber, and is dressed with chopped fresh parsley. If you are using raw couscous, then cook it as per package instructions.

Set it aside and let it cool before proceeding. Take all the vegetables in a bowl and mix them with couscous. In a separate bowl, blend olive oil, lemon, coriander, salt, and Dijon mustard. Pour this dressing over the couscous and salad is ready to eat.

2. Artichoke and Sun-Dried Pasta

You would be happy to know that artichoke and sundried pasta could be prepared in 10 minutes. To prepare this delectable recipe, you would need garlic, red pepper, black olives, basil, box bow tie pasta, and sun-dried tomatoes.

Gather the ingredients and cook the pasta as per instructions. Saute the garlic in a pan for 1-2 minutes. Now add the red peppers. Allow it to cook for 2-3 minutes. Add other ingredients, including artichoke hearts, basil, sun-dried tomatoes, and basils. Toss the mix with the cooked pasta and serve.

3. Smoky Vegan Black Bean Soup

Make this delicious recipe by using tomato paste, onion, smoked paprika, ground cumin, carrots, extra virgin oil, black beans, and celery. Heat oil in a medium and add celery and onion.

After a few minutes, add garlic, cumin, tomato paste, and paprika. Stir it until it turns golden brown with ½ cup vegetable broth. Transfer the contents into a slow-cooker bowl along with remaining broth. Cook the mix on high for 4 hours and serve with cilantro.

4. Vegan Potato Salad

It is low in calories, plus a yummy recipe with classic flavors. Make a summer plant-based recipe with potato, plant-based mayo, onions, celery, kosher dill pickle, salt, pepper, mustard, and white vinegar.

Boil potatoes and drain them. Make a dressing using mayo, green onions, pepper, and dill pickle. Stir the mix well and keep it in the fridge for a few hours. Cut the potatoes in quarters and add the dressing to it. Add salt to taste and seasoning if needed.

5. Vegan Strawberry Shortcake

If you like strawberries, then this shortcake is an ideal choice for you for Easter Sunday. To prepare this yummy recipe, you would need strawberries, sugar, all-purpose flour, baking powder, dairy-free-soy margarine, and unsweetened plain almond milk.

Preheat the oven to 400 F. In a bowl, toss the strawberries with 2-3 tbsp of sugar. Place the strawberries for 20-25 minutes in the refrigerator. In a food processor, mix the remaining ingredients, i.e., all-purpose flour, baking powder, and salt. Now add dairy-free soy margarine into the mix. Prepare dough and make 8-10 small round biscuits.

Transfer the biscuits on a baking sheet and sprinkle sugar. Bake the biscuits for 15-20 minutes or until they turn brown. Place the biscuit on a plate and add a scoop of vanilla ice cream and sugared strawberries when you serve.
