1. Oatmeal Pancakes

Consuming oats, in any form, lowers cholesterol levels and balances blood sugar. Vegan oatmeal pancake is a perfect recipe during brunch time.

To prepare this vegan oatmeal pancake, you would need 2tsp canola oil, 1tsp baking soda, 2-3tsp inorganic apple cider vinegar, 1tsp baking powder, 1 cup soy milk, ½-1 cup wheat flour, and food maple syrup.

Mix the soya milk, vinegar, oil, and syrup in a bowl. Now add oats and allow it to sit for 5-10 minutes. Take another bowl and mix baking powder, baking soda, and flour. Take a pan and coat it with oil. Pour batter to make a pancake and cook it for 3-4 minutes. Flip the pancake and again cook it for 1-2 minutes. Serve it by drizzling maple syrup.

2. French Carrot Salad

Carrot is a weight-loss-friendly food and is also a good source of sugar, fiber, water, and protein. It is good for eye health and also reduces the risk of cancer. The best way you can consume carrot in breakfast or lunch is by making french carrot salad.

To prepare this, take tbsp chopped green onion, 1 pound peeled carrots, rinsed and drained chickpeas, fresh parsley, extra virgin olive oil, Dijon mustard, sea salt, lemon juice, and honey.

Grate carrots or process them in a food processor. Add parsley and chickpeas into the mix. To make the mix, take all the ingredients into the bowl and give them a nice mix. Pour the dressing over the grated carrot and allow it to marinate for 10-15 minutes. You can consume this salad for up to 4 days if kept in the refrigerator.

3. Cinnamon Swirl Pancakes

Cinnamon is well-known for its anti-inflammatory properties. It is loaded with antioxidants and reduces the risk of heart diseases.

To make this delicious treat, you would need 3 tbsp water, 2 cups of soya milk, 2tsp baking powder, vanilla extract, all-purpose flour, sugar, salt, ground flax seeds, and creamy spread. For the swirl, you need brown sugar and maple syrup.

Take a bowl and mix flax seeds and water. Take another bowl and add salt, sugar, and flour.

Mix the ingredients and add a flaxseed mixture along with vanilla extract and milk to combine it. To make the cinnamon swirl, mix creamy spread, brown sugar, and cinnamon.

Now, heat the pan and our 1/4th cup batter on it. Add the cinnamon swirl mix on it. Flip the pancake and let it cook for 1-2 minutes. Serve the pancake with maple syrup.

4. Blueberry Baked Oatmeal

This is the perfect recipe for any occasion. If you do not have blueberries, switch it with any seasonal fruit. Use 2tbsp ground flaxseed, 2 cups of warm water, baking powder, cinnamon, chopped banana, blueberries, almond, coconut flakes, hemp seeds, whole rolled oats, and sea salt.

Now, preheat the oven to 350°F. Take a bowl and mix flax seeds and water. Allow it to sit for 5-7 minutes. Keep 2tbsp of almonds, coconut flakes, and hemp seeds aside. In another bowl, mix the remaining portion of all these ingredients along with cinnamon, baking powder, brown sugar, and salt.

Combine the almond milk, coconut oil, maple syrup, and pour it into a flaxseed mixture. Add the dry ingredients too. Now, layer the banana and strawberry into a baking dish and spread the mixture on top. Bake it until the top turns crispy. Let it cool for 15-20 minutes before serving.

5. Coffee Chia Breakfast Pudding

Take 4 tbsp of chia seeds, nearly 150 ml of coffee and coconut milk, 1tbsp of almond butter, 1/2tsp cinnamon, and 2tbsp of erythritol. It is the simplest brunch recipe you would ever find. Mix all the ingredients in a bowl and give it a nice mix. Refrigerate it overnight.
