To make this delicious soup, you would need 2tbsp butter, large onion, garlic cloves, 3 cups of vegetable stock, kosher salt, white pepper, 2tbsp maple syrup, diced carrots, cumin seeds, yogurt, or sour cream. For Chermoula, take cilantro, fresh thyme, garlic cloves, olive oil, ginger, lemon juice, chili flakes, Italian parsley, and coriander seeds.

In a pot, saute onion, garlic, and cumin seeds for 5 minutes. Now, add carrots, vegetable stock, white pepper, and bring soup to simmer. Toast the spices until they turn golden. Blend the ingredients and keep aside in a bowl. Stir the yogurt and maple syrup and add it to the bowl. Add spice and salt as per taste. Divide the soup in a bowl and add chermoula. Add more cream to enhance its flavor.

2. Vegetable Lasagna Soup

Make this healthy vegetable Lasagna soup for a perfect dinner. Heat the olive oil in a pot. Saute carrot and onion for 5 minutes. Now add garlic, vegetable broth, tomatoes, basil, oregano, sugar, rosemary, salt, and pepper. Bring the mix to boil and add boiled pasta.

Stir it occasionally. When it is simmering, add parmesan, ricotta, and shredded mozzarella cheese. Stir spinach and let it heat for 5 minutes. Serve it hot and garnish it with parsley.

3. Thai Butternut Squash Lentil Soup

It is a protein-packed and flavorful soup. Add coconut oil in a pot and let it heat for 2-3 minutes. Add chopped onion, garlic, and saute for 5 minutes. Now, add butternut squash cubes, curry powder, and turmeric.

Stir coconut milk, peanut butter, and lentils. Now blend the half soup in a blender. Pour soup back into the pot. Serve it hot and garnish it with spinach.

4. Curried Cauliflower Soup

It is a healthy and creamy vegetarian soup. To make curried cauliflower soup, you would need a chopped onion, garlic, and cauliflower, one apple, fresh ginger, coriander, vegetable broth, canned coconut milk, 1tbsp of orange or lime juice. Heat oil in a pan and saute onion and garlic.
