1. White Corn Cheese Arepas

Have you ever heard about this recipe before? To make this delicious recipe, you would need warm water, precooked white cornmeal, shredded mozzarella cheese, grated Edam cheese, grated parmesan, crumbled feta cheese, salt, and butter. For the hogao, take chopped tomatoes, minced garlic, ground pepper, chopped scallions, and olive oil.

To make the arepas, in a bowl, add butter, pre-cook white cornmeal & warm water. Make a smooth dough. Now add cheese and knead the dough. Make small balls from it. You can also flatten them into discs. In a non-stick pan, melt butter and cook the arepas. Make sure that it turns golden brown from both sides. Let it cool for a few minutes. Slice it in half and fill the cheese.

To make hogao, in the saucepan, add scallions and garlic. Cook this mix for a few minutes. Now add tomatoes, salt, and pepper. Cook it for ten minutes. Adjust the seasoning if needed and serve. 2. Pelau Stuffed Bell Peppers

To make Stuffed Bell Peppers, you would need, butternut squash, vegetable oil, scallions, finely chopped garlic, salt (as needed), tomato, brown sugar, dried thyme leaves, dried oregano, frozen black-eyed peas, long-grain white rice, coconut milk, lime juice, chopped fresh cilantro, and bell peppers. To prepare the squash, peel the skin and trim the top and bottom of the squash. Cut it into half and scrape the seeds.

In a pan, add oil and let it heat for a few minutes. Add sugar and let it cook until it turns brown. Add squash, scallions, garlic, salt, and pepper. Now add tomato, oregano, and tomato paste. Allow it to thicken for 10-15 minutes.

Next, add rice, black-eyed peas, and stir it occasionally. Heat a grill for about 325°F. Brush pepper with vegetable oil and season it with salt and pepper. Take the rice mixture and stir the scallions, lime zest, and lime juice. Divide the mixture and stuff it into the pepper. Grill it until it turns soft.

3. Grilled Greek Salad

Have you ever tried grilled salad? In the grilled Greek salad, everything you serve is grilled and served hot with oregano marinade. To make the marinade, blend all ingredients, including lemon juice, dry white wine, extra virgin olive oil, oregano leaves, thyme leaves, yellow onion, black pepper, and kosher salt. Blend until the mix turns smooth.

For the salad, heat a grill and rub the grates with olive oil and season tomatoes and onion with salt and pepper. Add marinade and toss to coat. Thread the tomato, halloumi, and onion. Place the skewers in a shallow dish.

Now, pour the marinade on the skewers before grilling it. Cook until it turns soft. Now transfer the grilled romaine on a serving platter. Drizzle the marinade on the salad and serve it. This salad is famous in Greece and is served in every restaurant.

4. Pasta e Fagioli

Pasta e Fagioli means pasta with beans. It is a great vegetarian dish and is mainly served in Italy. You would need olive oil, diced celery, sliced carrot, garlic cloves, diced onion, bay leaves, tomato paste, freshly grated parmesan cheese, 1tsp rosemary, cooked white beans, crushed tomatoes, vegetable broth, salt, and pepper (as per taste).

In a soup pot, heat the olive oil. Now saute onions and garlic for 2-3 minutes. Add cooked beans, rosemary, thyme, bay leaves, and vegetable broth. Add the dry pasta and cook it until it turns soft. Adjust the salt and pepper according to taste.

5. Roasted Vegetable Chickpea and Quinoa Salad

Salad, eaten in any way, is beneficial for health. This vegetable chickpea and Quinoa salad is a perfect dinner treat. To make this salad, you would need a red onion, yellow peppers, lemon juice, caster sugar, chopped coriander, vegetable stock, peeled and sliced avocado, quinoa, peeled, and diced beetroot.

Heat the oven and put the onion, beetroot, and pepper in a tin. Roast the mix for 15-20 mins and rinse the quinoa and drain in a sieve. In a saucepan, add the quinoa and let it cook for 5 minutes. Also, add the stock in the pan when you are boiling quinoa. Now mix roasted vegetables, chickpeas, and avocado in a bowl. Dress the mix with oil and serve it warm.
